Our First Official Knife Maker Meeting - Jin Knives

Our First Official Knife Maker Meeting - Jin Knives

Yesterday we went to our first knife maker meeting in Tokyo.  There aren’t a huge number a knife makers in this city… lots of stores, but not so many makers.  While we were researching knife makers before our trip, we stumbled upon this guy.  His knives seemed unique and had great personality.  We were truly in for a treat meeting with him. His store/workshop was about a 45 minute train ride from Tokyo center.  Walking around the area near his shop really felt like Japan to me.  If his shop doesn’t look like it belongs in japan, I don’t know...

Our Japanese Excursion - The Beginning

Our Japanese Excursion - The Beginning

As many of you know, Sara and I are going to be spending the next three months in Japan, meeting knife makers, stone companies, and anyone else we have time to talk to.  In the process, we are hoping to find cool new products for our customers, increase our knowledge so we can better answer questions, and take lots of pictures to make you want to visit Japan more (everyone should visit at least once) ;) .  During this time, we will be adding all kinds of new products to our store… new knives, new stones, and some other little...

A repost of our 9/15 Newsletter

Hey guys-   How’s it going?  We’ve got lots of new things going on here at Japanese Knife Imports.  Sara and I will be spending the next three months traveling all over Japan meeting new knife makers and stone companies.  During that time, I will also be training under some sharpening experts to help improve my sharpening.  For those of you who are worried about changes in our shipping, fear not!  We continue to ship our existing inventory from LA while we are gone…  with one small exception… we will be taking down the sharpening stones from the website.  The...

Going to Japan!!!

So, in about 2 weeks my wife Sara and I are heading to Japan. We will be there for about 3 months, meeting with knife makers and stone companies. Also, i will be learning more about knife sharpening from a knife sharpener while i am there. Over the 3 months we are there, we will be meeting with around 25-30 companies, trying to find new and interesting products to bring you.During this time, we will continue to operate the business normally. Our stock in LA will still ship from LA. But while we are there, we will be picking up...

Restaurant Profile - Yakitoriaya

Restaurant Profile - Yakitoriaya

This story begins a few years ago, when Sara and I were visiting her family in Japan.  One of our first nights there, Sara’s sister, brother-in-law, and close family friend took us to an Izakaya (focused on Yakitori).  I didn’t know it at the time, but there was a long discussion about whether or not I would be ok at an Izakaya or Yakitori restaurant.  Sara held off on telling me this until a few years later, after we had started living together in LA.  I was shocked.  Everyone that knows me knows that I love food… all kinds of...

Regional Knife Makers

Japan has a number of knife making regions.  Some of these (like Sakai, Sanjo, and Seki) have become very popular in recent years, and some are still unknown.  Since there is not so much information available in English about these regions and certified craftsmen/craftswomen, Sara is spending a little time every day working on translating some of this work.  We hope you find this information as interesting as we do.  If you have questions, let us know and we'll do our best to answer.  Also, we are working on putting together a map that incorporates this information, so you will...

A few words from Sara

It has been about a month since we updated our blog. Blogging is a serious commitment. Some people do it every day, some people do it occasionally, and some people have never done it before. We decided to use blog in hopes that it might help us better communicate with our family, friends, customers and business partners. So, after a month of slacking, I finally took up my pen (or keyboard) because Jon wasn’t doing it. Unlike Jonathan, I am not a knifenut and so I have a different perspective on our knife business... more of a lay person's point of view. I have...
