Introducing the Gesshin Heiji 240mm Wa-Gyuto, crafted from Heiji's proprietary semi-stainless steel, expertly hardened to 63 HRC, and clad in stainless steel. Thanks to its exceptional heat treatment, this steel sharpens more easily than the hardness might suggest, making it one of the most enjoyable steels we've worked with.
Each knife features a beautifully crafted burnt chestnut octagonal handle with a walnut ferrule, providing both aesthetic appeal and ergonomic comfort.
Before shipping, we perform extensive preparation to ensure optimal performance and comfort. This includes rounding and polishing the spine and choil, along with a full wide-bevel sharpening. This meticulous process removes any high or low spots, ensuring that future wide-bevel sharpening is smooth and effortless.
Handcrafted in a single-person workshop in Sanjo, Japan, the Gesshin Heiji 240mm Wa-Gyuto is a true testament to the artistry and precision of Japanese knife-making.
