Gesshin Magomitsu Saku 140mm Blue #2 Makiri

• Our Gesshin Magomitsu workshop is dedicated to the production of historical styles of knives and the preservation of history and traditions of the people of the Noto Peninsula. Their strong ties to the sea and the cuisine they developed from it prove the need for dependable tools that can withstand the rigors of the ocean.

  Makiri knives have a strong maritime history, particularly with the Ainu fishermen of the Noto Peninsula, Northern Ishikawa Prefecture. The seafaring men counted on this austere-looking knife for a number of tasks while on boat: rope cutting, cutting nets to proper sizes, and, of course, butchering fish. However, it played a more central role in day-to-day life. It was, in essence, their EDC. Whatever needed cutting was dealt with using a makiri.

  This knife can be used for a wide variety of tasks in an outdoor and camping context. Its robust geometry permits so. It is capable of preparing fruits and vegetables and is particularly well-suited to fish and game. This is technically a single bevel knife with an ura (hollow ground backside) so deba butchery techniques transfer over quite well. Removing sinew on game and livestock meats is an easy task akin to using a hankotsu. The bevel is aggressively convexed and therefore has a toughness not common to single bevel knives. You can count on this knife for light woodwork and bushcraft tasks like whittling and feathersticking as well.

  Our Gesshin Magomitsu makiri come with robust and very well made vegetable-tanned leather sheaths. Double-stitched, riveted, and thick, it can withstand the rigors of an outdoor lifestyle. No doubt, it will patina and look better over time. It also has an interesting design for the belt loop; it doubles as the locking mechanism for the knife. The belt loop swivels over the top of the handle to lock it in place while the knife is worn on-belt. To access the knife, rotate the sheath and pull the knife out.

• The Small Gesshin Chinese Cleaver is a stainless clad white #2 cleaver.  It is designed to be easy to sharpen, but require less care than traditional carbon steel knives due to the stainless cladding. Chinese cleavers are all-purpose knives, and this knife works well for vegetable, meat, and fruit cutting tasks. • This is a set of 3 types of traditional Japanese nails, made from the same twisted damascus material Hinoura-san uses in his high-end knives.  Sanjo, the city in which he resides, is famous for making these traditional types of nails, which are used in the reconstruction of temples and shrines.  Every few years, the younger craftsmen from the area come together to make tons of these nails for use in these temples and shrines.  Hinoura-san and I share a deep interest in these kinds of traditions.  We had a great idea to have him make nails like these, but when we went to talk to him about it, he had thought of the same thing around the same time already.  It seems like these were destined to be.  While they are functional and can be used, we had them made with the intention of being artistic pieces.

   

  The three types of nails are Makigashira Kugi (the one with the rolled top), Kaiore Kugi (the one with the bent top), and Kakuatama Kugi (the one with the square top).

   

  These are carbon steel, and can rust if not cared for properly.  We recommend using renaissance wax or a similar protectant if you intend to leave these out on display.  We will make sure they have a protective coating before shipping as well.

Gesshin Uraku 210mm White #1 Mizu-Honyaki Wa-Gyuto

• "Honyaki" is a traditional Japanese term used to describe a type of high-quality knife made from a single piece of steel, usually carbon, without any additional layers or cladding. The term “honyaki” emphasizes the knife's craftsmanship and the purity of its materials.

  This particluar example is made of White #1, is very finely mirror-polished, comes with a very handsome tagayasan (wenge) handle and impressive tagayasan saya, and the hamon depicts Mount Fuji with a sun on one side of the blade and a crescent moon on the other side.

  The process of making a honyaki knife involves heating the steel to a glowing, cherry red temperature, forging it into shape, differentially heat-treating the blade by placing a layer of insulating clay on the spine, and quenching it in either oil or water. Water-quenched blades are much more difficult to work with, resulting in a higher rate of loss. This type of knife is known for its exceptional sharpness, edge retention, and craftsmanship. However, honyaki knives require more care and attention during use compared to sanmai knives, as they are exceptionally hard and brittle.

  Due to their intricate and demanding production process, honyaki knives are often considered the pinnacle of knife craftsmanship and are highly prized by chefs and culinary enthusiasts.

  The pursuit of mastering the honyaki blacksmithing technique is one that can take a craftsman years. Within that time there is a huge number of lost kiji (rough forged blanks) that shatter or crack during the heat treatment process. I remember touring the workshop of a really talented craftsman. Tucked away in a corner of the space was a box filled with dozens of kiji, possibly a hundred, and they were all cracked.

• "Honyaki" is a traditional Japanese term used to describe a type of high-quality knife made from a single piece of steel, usually carbon, without any additional layers or cladding. The term “honyaki” emphasizes the knife's craftsmanship and the purity of its materials.

  This particluar example is made of White #1, is very finely mirror-polished, comes with a very handsome ebony handle, and the hamon depicts Mount Fuji with a sun on one side of the blade and a crescent moon on the other side.

  The process of making a honyaki knife involves heating the steel to a high temperature, forging it into shape, differentially heat-treating the blade by placing a layer of insulating clay on the spine, and quenching it in either oil or water. Water-quenched blades are much more difficult to work with, resulting in a higher rate of loss. This type of knife is known for its exceptional sharpness, edge retention, and craftsmanship. However, honyaki knives require more care and attention during use compared to sanmai knives, as they are exceptionally hard and brittle.

  Due to their intricate and demanding production process, honyaki knives are often considered the pinnacle of knife craftsmanship and are highly prized by chefs and culinary enthusiasts.

  The pursuit of mastering the honyaki blacksmithing technique is one that can take a craftsman years. Within that time there is a huge number of lost kiji (rough forged blanks) that shatter or crack during the heat treatment process. I remember touring the workshop of a really talented craftsman. Tucked away in a corner of the space was a box filled with dozens of kiji, possibly a hundred, and they were all cracked.

We’ve finally found them. This Gesshin Uraku line fits the bill perfectly. These knives are made of white #2 steel with a kasumi finish. They come with ho wood octagonal handles and matching ho wood sayas. Unlike many low cost single bevel knives, these ones are very well finished and have significantly less problems than lower cost knives (all knives have some imperfections, even high end knives, but these have fewer high and low spots, softened edges, less prevalence of wavy backs, less prevalence of torsional twisting, etc.)
