The Gesshin Kagekiyo 180mm Ginsanko Deba is a knife used for butchering fish. The high-quality construction includes a ginsanko hagane and a softer stainless jigane. The grind of the knife is finished off very well to the exclusion of the many large high-and-low spots common on more affordable single bevel knives. This means that each subsequent sharpening that is done to this knife will be off to a good start. The spine and choil are polished and the choil is rounded off to relieve it of any uncomfortable hotspots. The blade is thin relative to many other deba and as such will be more nimble and lightweight in the hand. Finally, the blade is finished with hand-engraved kanji and comes with an octagonal magnolia and buffalo horn handle and magnolia saya.
