Gonbei 165mm Powdered Steel Santoku

For many years we've had customers ask us about carving sets.  Especially around Thanksgiving, it seems everyone is looking for a set like this.  We've always looked around during our annual trips to Japan, but the concept of a carving set is not such a big part of Japanese culture.  This year, we finally found a few sets while visiting Seki.  Of course, we immediately picked them up and brought them back before the holidays.  The set includes a stainless carving knife and a carving fork.  They have a sleek and stylish curved design and come very sharp and ready to go (we are sharpening them before they leave the store). The Gonbei AUS-10 series is a western handled series designed for toughness and edge retention in professional kitchens as well as your home. As a Western-handled alternative to our Gesshin Uraku Stainless series, this series is very tough (resists chipping) and durable, while having good edge retention. Though these knives are more of workhorse knives, they are not particularly thick at the spine or behind the edge. Rather, they are on the thinner side of a workhorse knife.

If you're looking for a Western-handled knife that can hold up under some serious use, this is your knife.

Our Gonbei Hammered Damascus series are stainless steel (Swedish stainless steel). They come with ho octagon handles and are double bevel knives that can be used by either right or left handed users. Like our Gesshin Uraku series, they are good workhorse knives... tough and durable, easy to sharpen, and good edge retention. While not super thin, like our Gesshin Ginga line, they are by no means thick knives. We recommend these to professional cooks and home cooks alike as a good all-around knife.
