  • This Gesshin Ittetsu 270mm Blue #2 Hon-Kasumi Hamokiri is a special order from the talented craftsmen responsible for our Ittetsu series. Expertly forged and precisely ground, the overall fit and finish and performance of this knife are second to none. The size and weighty nature of this blade give it a really nice presence and in-hand feel. The hamokiri knife is used for making very fine cuts along the fillet of a hamo, aka conger eel, in order to break the small bones that run throughout it.
